    A few months back I catered a wedding and the bride requested prime rib, I ended up smoking 6 whole rib roasts and used some of the bones I remover for au jus, the rest have been vac sealed in my freezer and slowly used for various things.

    Last week I decided to season some up and throw them on the smoker while I was doing some brisket for a client, they don’t Have a ton of meat but they are a delicious snack.

    Seasoned with salt & pepper and spritzed with ACV. Dont remember the exact temp I pulled them but they were juicy and had some great flavor, plus the smoked bones made a crazy good beef stock I later used for beef barley soup for my wife and I
