Since I’m trying to cut back on white flour right now for my little inflammation symptoms, I’m making even more homemade foodβ€”it’s easier and tastes better 😍 So for my tacos, I made these 100% spelt flour tortillas!

Spelt flour is more nutritious and has a great flavor. I highly recommend giving it a try!

-spelt flour 400 (g)
-water 250 (mL)
-salt 1 (pinch)

Mix the flour and salt in a bowl. Pour in the water and knead lightly to form a dough. You can also do this step using a stand mixer with a dough hook.
Let the dough rest for 20 minutes.
Divide the dough into 12 small balls. On a floured surface, roll out each ball into a very thin tortilla (1mm thick).
Heat a pan over medium heat and cook each wrap one by one on both sides until golden. Use them immediately or store them in a freezer bag at room temperature for up to 2 days, or in the freezer for up to 2 months.
