    I’m lucky to live in a neighborhood near a fish monger who has the if not close to the biggest fish dry aging program in the states. Go there once a week.

    Both raw and cooked it’s the best fish I’ve ever had. The texture and flavor is better and the skin gets so crispy so easy it makes you look like a chef. Never had a bad experience with one.
