    Looks tasty. Try experimenting with a thermometer if you haven’t ? I let internals get to 120 before I finalize the crust get it up to 128-130 then take off and rest for 20mts. Foil cover in oven.
    Important thing to note is burnt butter tastes gross & it’s real easy to burn
