Was lucky enough to get a reservation for the Corima x Oriole pop up. Overall I think this was my favorite fine dining experience ever which was especially shocking to me considering the $180 per person price tag. Every course had amazingly complex and well layered flavors varying between Mexican and contemporary. Some of the standouts to me were the Serrano Ham, the Sunchoke, the Lengua, and the Goat Semifreddo. The Serrano Ham was a perfect first dish containing a beautiful combination of savory, sweet, and aromatic flavors. The Sunchoke was incredibly savory and umami with a variety of textures. The Lengua was perfectly cooked and by far the best beef tongue I’ve ever had. My only criticism was the that pacing of the meal could have been a little faster as dishes would sometimes come out slowly but overall was a fantastic meal.

    I was there as well at 7:45, thought the pacing was too fast in the beginning.

    The first dish (ham) was perfect , seemed simple but yet so much flavor – sablefish/crab was my favorite.  Least favorite was the queso fresco.

    Some staff didn’t seem to know a few of the ingredients and one literally asked to see our menu 😂.   

    Overall 8/10, the ingredients didn’t feel like New York fine Dining  which was refreshing.   Value 10/10.

    The blonde woman running point between the front and back of the house was A+

And yeah, the pacing was off, but it kind of always is at Corima (this was my fourth time, three of which were collabs; I might do a summary post of their collabs I’ve been to at some point). I kind of feel like if service is slacking a bit but I get to save $50-100 over other restaurants of that caliber, then that’s an exchange I’m willing to make.

    I was also there but at 9. The pacing was pretty bad for me. There were very large gaps between dishes. I felt like they were really trying to do their best but it wasn’t the best service. Still they at least seemed like they were trying and definitely were personable. Not all the dishes worked for me but overall the food was excellent. And as the OP said, the $180 price point for this was fantastic.
