I bought these beef cheeks yesterday dry brined them last night and woke up today and they left the paper towel soaked. This has never happened to me. I also usually go with salt and pepper but this time I used a brisket rub my buddy made.

    Dry brining draws the moisture out. I’d say this is expected but can’t assume why it hasn’t happened with your salt and pepper in the past. I keep a tray under my wire rack when I dry brine overnight and there is liquid in it the next day.

    Those cooling racks usually fit nicely into a baking sheet. Just feel like that’s a better option than directly on to your fridge shelves.

    This happens to me while dry brining. My assumption is the salt is replacing the water in the meat.
