    not even really rare heh, some people just really like to cook the shit out of beef. I used to work for a publishing company, the big exec from NYC would come out here to San Francisco every 6 months and take us all out for steak at [Alfred’s (iykyk)](https://www.sfgate.com/food/article/Alfred-s-Steakhouse-has-abruptly-closed-in-San-15648255.php) and would always order his well done hahahaha, oh fun times. the waiters knew to expect it from him so it was never awkward.

    This post made me chuckle from a memory of going to a steakhouse with a dear friend after a successful nonprofit educational event we did. I had prime rib…medium rare. She had sirloin, well done.

    We couldn’t even handle looking at each other’s plate.

    That’s a medium going towards medium well. I had a guest that ordered medium got a medium the first time, asked for a new one because it was too under done sent out new one. Again too under done at that point I bring out the steak card with pretty decent visuals of what the temperatures are supposed to be. And still fought me on the fact that his medium was not actually a med well going to well done… I just told him I’m not wasting more food I’ll comp the steak but it ends there. Sad part too is this dude works at a long horn steak house. I wonder how many orders he’s fucked, I feel bad for the guest.

    If someone truly said that about this steak…they’re silly. There is a reason almost ANY high end steak house and chefs almost always cook steak med-rare by default.
