Rubbed with Meat Church Holy Cow, smoked for 3 hours on a Weber kettle, then braised in beer (Westmalle Dubbel for the connoisseurs) and beef broth for another 5 hours. Very satisfied with the result!

    The other 5 hours were in a tray with beer? Did you keep in the weber or changed to oven?

    Did you trim a lot of fat first? The ones I got from Sam’s were a mess to trim and probably 50% fat.

    I don’t know why I have a mental block with cheeks and tongue I just can’t bring myself to eat them

  5. Looks delicious. I’d like to try it, but if I’m buying cheeks, it’s for traditional Mexican barbacoa. My wife would kick my ass if she *could* have had barbacoa, but isn’t eating barbacoa.
