Ingredients:• 1 brown onion, diced• 2 garlic cloves, chopped• 1 tbsp tomato paste• 1 tin diced tomatoes• 1 tin chickpeas (or soak dried ones overnight)• 2 tbsp olive oil• 1/2 cup warm water (to dilute tomato paste)• 1 tbsp white vinegar• 250ml warm water (extra)• 2 tsp salt• Pepper to taste
Steps:
1. Heat olive oil in a small pot over high heat.
2. Add diced onion and cook until softened.
3. Add garlic, diced tomatoes, vinegar, and tomato paste diluted in warm water.
4. Season with salt and pepper. Let it boil for about 5 minutes.
5. Add chickpeas. Lower heat, cover, and simmer for 15+ minutes, stirring occasionally.
6. Cook until thickened to your liking.
Serve with fresh bread or enjoy it just as is.
