  1. This is part 16 of my ongoing “Caught in California” catch & cook series, and features a sheephead I speared. Made a quick ceviche with it and was blown away – the meat is mild, with a slight chew and sweetness; I’m starting to see why some people compare it to shellfish (which sheephead eat a lot of). Took all of 15 minutes of work too.
