👩‍🍳 Moroccan Chickpea Soup in a Ninja Soup Maker

Ingredients
1 onion chopped
2 garlic cloves crushed
1 medium carrot chopped
1 celery stalk chopped
1 tin chickpeas 400g (rinsed and drained)
1 tin chopped tomatoes 400g
1/2 tsp each ground cumin cinnamon, paprika and Cayenne pepper
800ml vegetable stock or up to the MAX line
Fresh mint leaves chopped (optional for garnish)

Instructions
1. Optional Step: Heat a little oil in your soup maker (if it has a saute function) and add the onion, garlic and celery, saute for 5 minutes, or for the program length on your soup maker.
2. Add the remaining ingredients to your soup maker, taking care not to go over the MAX line.
3. Put the lid on and set off on the smooth setting.
4. Garnish with chopped mint leaves (optional).
