Tamara Tomás, the front-of-house manager, puts it simply: “We’re a rice house, and we work mainly with Mediterranean produce. Everything’s fresh, everything’s local. And you can taste it. People notice it, especially in the rice, in the broth, and in the grilled flavours.”
