Preparation

  1. Place flour in bowl of electric mixer with paddle attachment. Add butter, and mix on low speed until butter is size of peas.
  2. Dissolve sugar and salt in scant 1/2 cup cold water. Sprinkle over flour mixture, and mix briefly at low speed until dough just comes together. Divide dough in two slightly unequal halves, and roll out for pie. Or form dough in flattened disk, wrap in plastic, and refrigerate until ready to use or overnight.
