day 6 of my lenten series: FAKES (lentil soup)
the perfect bang for your buck meal!

Ingredients:
• 1 cup olive oil
• 2 celery stalks, diced
• 1 cup carrots, diced
• 1 yellow onion, diced
• 5 garlic cloves, minced
• 16 oz lentils
• 2 tsp oregano
• 4 bay leaves
• 4-5 cups vegetable broth
• 2 tbsp tomato paste
• 2 cups diced tomatoes (canned is fine)
• ½ bunch parsley, chopped
• Salt & pepper, to taste
• ¼ cup red wine vinegar (for serving)
• 1 bunch shredded spinach (optional)
Instructions:
1️⃣ Sauté onions, garlic, carrots & celery in olive oil over medium heat for 5 min.
2️⃣ Add lentils, bay leaves & oregano. Cover with broth & simmer partially covered for 20 min, adding liquid as needed.
3️⃣ Stir in tomatoes, tomato paste & optional spinach. Season & simmer for 25-30 min until lentils soften.
4️⃣ Finish with parsley & red wine vinegar. Serve warm with bread & extra oil.

Looks amazing and vegetarian. That soup finished with beef bone broth and well fried bratwurst bits (removed from casing) is one of my favs from Der Rhinelander
