Forget peameal bacon (or even the enticing back bacon to the right in first photo), the must get at SLM is the side bacon at Carnicero’s. So beautifully glazed and juicy and unctuous. You can get just the meat by weight or with some mustard sandwiched in a roll. Not shown, but a helpful tip, they have mashed potatoes with trimmings from their bacon mixed in!

This is where to send tourists in the market.
Tell them to ask for a back bacon/side bacon mix though.
