







Hi guys, I'm a serious newbie when it comes to meat consumption or cooking. It's Easter and I want to cook a nice meal for me and my meat-loving husband, and we've been fasting for about a month so he really wanted steak for Easter. I literally know nothing about any of this so I looked up recipes and was determined to buy either a prime rib or some ribeye steaks. But when we got to the butcher and asked for rib steak/any of the above ^, they gave us these pieces, and later on when we looked at them, we were a little disappointed because this wasn't what my husband wanted. We went to two different butchers. We got 6 pieces total for about 20 bucks. Does anyone know what these are?
Any help would be greatly appreciated, thank you!!

They didn’t give you steak, they gave you rib/shortrib. Need to make sure you ask for “Ribeye” if you want that style steak.
Those beef short ribs need to be cooked low and slow so I recommend either smoking or braising. Or smoking and then braising.

Yeah, you got short ribs, not ribeye. These aren’t steaks. The price should have thrown you off. You’d be hard pressed to get this much ribeye for $20 as it normally goes for $11-$20 per lbs depending on the location and quality
Beef Short Ribs can be sooo good braised, but yeah, next time ask for Ribeye. I made some Braised Short Ribs for Thanksgiving last year. Took me two days because I like to let them sit in the fridge overnight before finishing but it can definitely be done in a day.

Idk what your level of comfort is cooking: but there’s a lot of recipes out there.

Short rib
If it’s got a bone in it it could be ox tail bits or short ribs. Short ribs have a flat bone , ox tail has a round bone.
When you don’t know for sure, make it into a beef stew.
Oh that looks fucking fantastic. If you want to eat them like a Korean, slice them into small pieces against the grain (you might need to semi-freeze them first so they handle better). Then grill them on an open flame and eat them as they come off the grill. A tabletop propane grill would be best for this.
Otherwise you could braise them with sugar, soysauce, potatoes and carrots, garlic, etc. and do what we call Galbi Jjim.

Short Ribs..just braze em off and then slowly cook in liquid for 3-4 hours..

Those are ribs. Considering you asked for rib meat, that makes sense.

I love short ribs as well but those look old in the wrong way. All the brown discoloration randomly throughout the meat. 4th pic in sealed it for me.
How did they smell?
Next time ask them for new York strip steak or ribeye. You’d probably be happy with either
