A reddish crust on a baguette is most commonly an indication of a long fermentation (24 hours), especially one involving a preferment like poolish or a sourdough starter. If a baguette is made the same day using commercial yeast—especially with shorter fermentation (e.g. under 6 hours)—the crust will typically have a lighter, golden colour, rather than a deep reddish-brown.
