Here’s the absolute best birria taco recipe (with consommé) I’ve ever seen. From plant based chef extraordinaire Derek Sarno. He uses oyster mushrooms. His recipes aren’t the healthiest but they can be easily adapted for WFPB. He creates five different meals using the oyster mushrooms and birria broth.

I haven’t had it, but people use jack fruit for pulled pork
I made it with dried lions mane mushrooms and it was awesome. I just rehydrated them with the birria sauce and simmered.
I find these SO freaking chewy. I would highly recommend soy curls for this instead.

Birria taco meat is more shredded than cubed.
People use mushrooms or jackfruit for this type of substitution.
