Recipe:
Greek Baked Giant Beans (Gigantes Plaki)
Ingredients:
• 500g dried giant beans (soaked overnight)
• 1 large onion, finely chopped
• 2 garlic cloves, minced
• 2 carrots, diced
• 1 celery stalk, chopped
• 400g crushed tomatoes
• 1 tbsp tomato paste
• 100ml olive oil
• Salt & pepper to taste
• 1 tsp dried oregano
• A pinch of sugar
• Crumbled feta (for topping)
• Fresh parsley, chopped (for garnish)
Instructions:
1. Boil the soaked beans until tender (but not mushy). Drain and set aside.
2. In a pan, sauté onion, garlic, carrot, and celery with olive oil until soft.
3. Add tomato paste, crushed tomatoes, sugar, salt, pepper, and oregano. Simmer for 15 minutes.
4. Combine beans and sauce in a baking dish (preferably clay pot).
5. Bake at 180°C (356°F) for about 1 hour until golden and thickened.
6. Top with crumbled feta and chopped parsley before serving.
