Ingredients (Serves 2–3):
For the Grilled Calamari:
3 whole calamari tubes
1 tbsp olive oil
1/2 tsp ground cumin
1/2 tsp paprika
1/4 tsp sumac
1/4 cup pitted kalamata olives
1/4 cup pitted green olives
1 tbsp capers (for grilling)
For the Vinaigrette:
Zest of 1/2 lemon
1 garlic clove, grated
1 tbsp capers (whole)
1 fresh red chili, finely chopped
3 tbsp olive oil
1–2 tbsp rosé wine
2 tbsp fresh coriander, chopped
1 tbsp fresh parsley, chopped
1 tsp fresh mint, chopped
To Finish:
Sea salt, to taste
Cracked black pepper, to taste
Optional: Lemon slices for garnish
Instructions:
Make the Vinaigrette:
In a large bowl, mix the lemon zest, grated garlic, whole capers, chopped chili, olive oil, rosé wine, and chopped herbs. This will be your main salad bowl.
Prep the Calamari:
Slice each calamari tube into rings, but don’t cut all the way through — keep them attached.
Rub with olive oil, cumin, paprika, and sumac.
Grill:
On a hot grill or pan, cook the calamari for 2–3 minutes.
Halfway through, toss in the olives and extra capers to warm and char slightly. Grill everything for 5–8 minutes total.
Toss & Serve:
Add the hot grilled calamari, olives, and capers into the vinaigrette bowl. Mix everything together.
Plate it up, season with sea salt and cracked black pepper, and top with optional lemon slices.
