Roasted Red Bell Pepper Hummus
Ingredients:
2 large red bell pepper
Salt to taste
Pepper to taste
3 tbsp olive oil
1 cup boiled chickpeas
3 garlic cloves
1/4 cup tahini
1 tbsp cumin powder
Juice of 1/2 lime
Pinch of chilli powder
Ice cubes
Garnish
Olive oil
Chilli powder
Toasted sesame seeds
Freshly chopped coriander
Pita bread
Instructions:
•Start by seasoning the red bell pepper with salt, pepper and olive oil.
•Roast them in the oven until tender and charred (10 minutes).
•Let it cool and peel off the skin.
•In a blender, add boiled chickpeas, roasted red bell pepper, garlic, tahini, salt, cumin powder, lime juice, chilli powder, olive oil, ice cubes and blend.
•Garnish with olive oil, chilli powder, sesame seeds and coriander. Serve with pita bread and enjoy.
