    I’d give it a good pat down. Then season and sear and bring to temp. I would use a grill to cook and a thermometer to check for doneness.

    8pm. No time for dry brine. Pat them things down with a good paper towel. Salt, black pepper, garlic powder. On all sides. Personally, an optional addition would be cayenne powder cause i love subtle spicy. Neutral oil. Cast iron. Med-high heat. One minute on each side. Cut heat and butter basted at end till 125 internal for rare. Rest for ten minutes. Slice. Consume.

    Not much fat on those. I’d cook them rare/medium-rare.

    It’s when steaks have more fat (prime ribeye) that you want you cook them higher (medium/medium-well).

    Round steak? Cut it up against the fiber, soak in a mixture of lemon juice and balsamic vinegrette, roll in baking soda, and turn it into a stir fry in a large wok with soy sauce, mixed vegetables, crushed garlic and ginger shavings.

    Please not in that George Forman. If you have a heavy bottom pan sear both sides for made 2 mins (depending on thickness) and finish in oven. Would take no more thank 20 mins

  7. Cast iron, heat over medium high heat until it just starts to smoke a tiny bit. Have oven preheated to 500 degrees. Sear for 30sec, flip, sear for 30sec. Don’t flip, put in oven for 90sec, flip, another 90sec in oven. If it’s 1 inch thick, should be perfect medium rare. If it’s thinner/thicker slightly adjust time in oven.

    Toss that seasoning in the trash (personally). Just use some salt pepper and garlic. Then grill or cast iron. My preference is the grill, like a minute and thirty seconds on each side then let then rest.
