If its a Mexican restaurant it has to be queso fresco

It’s probably just shredded white American. It works well for that style of food, melting evenly with a mild flavor. And it’s pretty cheap. Cheese is a big expense for most kitchens, no reason to spend more when it works.

It’s probably just shredded white American. It works well for that style of food, melting evenly with a mild flavor. And it’s pretty cheap. Cheese is a big expense for most kitchens, no reason to spend more when it works.
