Dried wings out with SPG for a couple hours before throwing them on the grill. Went about 30min or so, came out great.

I need to use my vortex more often! I have some chicken thighs in the freezer I need to thaw out and dry brine overnight. Vortex would be excellent to help get crispy skin!!

What temp approx were you at? And were the wings frozen when you rubbed? Thanks – they look fantastic.

I used my vortex for the first time last week with wing and drums. How long did the cook end up being and did you have both vents fully open?

This is the only way I’ll do wings now. I like doing 24hr dry brine then toss them in a bag with my seasoning mix. Give it a shake then let them sit out while I get the grill going. Toss them in sauce afterwards and holy shit, the most amazing wings!

I like to put 7-8lbs of wings on at a time. I do 20 minutes on one side then another 15-20 on the other side with a 30 second crisping at the end. It gets crowded but it turns out fine.
I also have a problem of trying to get the most out of each use of the grill, but is it really a problem?

I love my vortex. It’s, hands down, the best way I’ve found to make wings. Last time I used Sweet Preacher pork rub because it was the only thing I had on hand and it came out surprisingly good! I got a lot of compliments on the smell coming from the microwave at work the next day.
