Just finished a 21 day trip to Japan. By far, my favorite food item I got was akashiyaki. Eaten in Kobe. Related to takoyaki, it’s an eggy batter (vs floury) and soaked in dashi broth before eating. One of the most satisfying dishes I’ve ever put in my mouth.

Big fan of Akashiyaki. Nice to see some else fly the colours. But I am worried as over the past 25 years my favorite spots have been disappearing. Owners get old and the kids want to do anything else possible. Oh, and contrary to the ingredient list in Wikipedia the shops that add yamaimo have the best ones IMO.
