    Just beautiful. If you are after perfection, my only suggestion would be to truss the steak so it holds the “ribeye” shape a little better. But that won’t impact the taste one bit.

    how do I get crust like this? I try to pat dry after sous vide and reverse sear. I go through all the paper towels trying to dry up my steak before searing, but I never get crust like this. It’s so consistent all over

  9. Crust looks perfect, but the middle part looks little raw, i like the front part which is light pink. I hope this comment helps.
