Spatchcock Chicken with a lemon marinade. Was gorgeous and super juicy. On the fourth pic I’ve included a graph of temps (in Celsius). Should my temps of been lower? Total cook was 1hr 5mins.

    That looks delicious. For a spatchcock bird, I generally aim for wherever it settles between 350 and 400f. Nicely done.
