    Even in a convection oven it’s necessary to rotate the pan half way through cooking. Rotate the pan.m then 5 more minutes and your golden.

    On here I always see you guys barebacking hotel pans with food, but in my experience, every place and cook I know uses parchment paper on the pans.

    What’s up with that?
