Got rice? Make a simple side dish. Ginger Scallion Egg Fried Rice.

  1. A very simple 4 ingredient recipe. What could go wrong?

    2 tablespoons avocado or neutral cooking oil, divided
    1 tablespoon ginger, grated
    3 stalks green onion, chopped
    3 eggs, lightly beaten
    1 pinch kosher salt
    3-4 cups cold leftover rice
    1 tablespoon soy sauce
    1 teaspoon sesame oil

    Heat a wok or large frying pan on medium high heat, add 1 tablespoon cooking oil and scramble the eggs until slightly undercooked. Season the eggs with a pinch of salt. Remove the eggs into a bowl.

    Turn the heat down to medium low. Add 1 tablespoon cooking oil. Add ginger and green onion.

    Add rice, carefully breaking up the larger chunks and cook for 2-3 minutes, until heated through. Stir in soy sauce.

    Mix in the cooked eggs. Turn off the heat, stir in sesame oil.
