Leftover easter ham turned into ham and bean soup! Plus cheesy pull apart garlic bread and brown butter chocolate chip cookies for dessert.

    **Ham and bean soup -** I do not follow any recipe but I will write down the steps I take

    * Celery, carrots, onions finely diced. Sautéed in olive oil and butter. Pinch of salt to help draw out moisture.
    * Add garlic and cook until fragrant. Add fresh thyme, knorr chicken seasoning, garlic and onion powder, tsp smoked paprika, lots of black pepper.
    * Add cubed ham, 1 can of white beans** (I use cannellini. Navy or great northern will work too), ham bone or hock, and add enough water to cover bone 2″ above.
    * Simmer with lid partially on for 4 hours or until soup is flavored to your liking.
    * Remove ham bone. Scrap any meat off bone, add back to soup. I will use a spider to lift up the big chunks of soup to look for any cartilage pieces that broke off.
    * Add 1 more can of white beans to soup 20 mins before ready to eat.

    ** You can blend the beans to thicken the soup without using a roux. But I find the beans break down on their own after a long simmer. Your choice.

    I used to use chicken stock in place of water but found the ham bone adds enough flavor that I don’t need to “waste” my stock on this soup.

    If using just ham hocks, I would buy a ham steak and cubed into piece size pieces.
