Kani miso, also known as crab tomalley, is a rich, creamy, and slightly sweet paste made by boiling a crab's non-meaty organs.

    I had (still have) a friend who told me their favourite and most unique taste find in Japan was this and absolutely raved about it.

    I’ve had seafood with them before, and they would always scrape “the gunk” off the meat, and said it was weird that I would eat crab innards.

    When I told them what kani miso was, they laughed it off.

    At first.

    Then I brought up other foods by fancy names chitterlings (intestines), sweetbread (throat glands), foie gras (liver), soft cod roe (sperm sac), Rocky Mountain oysters (testicles)…

    “It’s just crab and miso isn’t it? But it’s miso? Says so right here eh? Why would they say miso? It’s a soy paste innit? Miso!”

    They pulled up their phone to presumably prove me wrong.

    To this day, I’ve never seen someone go through the five stages of grief so quickly.

  2. Really hit or miss. Honestly taste best steam or marinated. The raw crab meat unflavored just has a pungent flavor.

    I’ve had the tomalley from crabs and lobsters many times but never at sushi. Hope I come across it at some point!

    Ocean providence sells kani miso from Japan. Look them up they have locations all over the US.

  10. I live in Yokohama and it’s not easy finding a sushi-ya with decent kani miso. The last time I had it was when I was in Vancouver, BC and we caught the crabs ourselves.

  11. never tried kani miso, but i do love tomalley from korean marinated raw crab and making bibimbap out of it.

    I was able to try Kani Miso for the first time in February during a trip to Japan and I loved it. The guy we ordered it from even warned us that foreigners usually don’t like it but one from my group is a native Korean and used to eat it as a comfort food as a kid. So she encouraged us to try it. Looks dreadful but tastes great and was super affordable. One of the best/most memorable things we ate on the trip full of great food. We even went back to the place. Was also not crowded/not full of tourists for being at the Tsukiji Fish Market:

  15. I’ve never heard of this thank goodness, I love miso but am allergic to crab and this would have got me for sure (other shellfish like prawns are fine so I don’t have to avoid sushi places altogether)
