I absolutely love Maghmour and I’ve made this recipe for years. But the original recipe calls for 1/2 cup of olive oil, which of course increases the calories quite steeply. Today I decided to make it without the olive oil (I only used a few olive oil sprays to caramelise the onions), and it turned out so delicious. I find it quite refreshing too!
I usually serve this dish with rice, but today I made some roasted potatoes (air fried with no oil) and it paired pretty well (although I still prefer the rice, to my husband’s dismay). I also had a small portion of ice cream. I used a food processor to blitz the frozen bananas, and then I mixed some soya milk to make it a bit more creamy. It’s like a soft serve ice cream and pretty delicious.
The recipes for the banana ice cream and the maghmour (both the one in this meal and the original recipe) are at the end of the carousel.
