BOISE, Idaho (CBS2 News) — A new culinary experience has arrived in Barber Valley with the opening of House of the Little Pig, a restaurant located along the Boise River Greenbelt. Chef de Cuisine Kevin Posada said the restaurant’s concept revolves around cooking with fire, using a charcoal grill as the foundation of its dishes.
“Mostly everything gets kissed by fire,” Posada said. “We wanted to bring that very primal and genuine feeling of warmth to the table.”
Posada says he moved from Hawaii to Idaho to help bring House of the Little Pig to life, working alongside the team behind The Lively in downtown Boise. The menu he’s curated is inspired by European and Mediterranean ingredients, but with a unique twist.
“I take a high interest in the culture of full utilization of a product. That’s how I grew up and that’s how my grandmother raised me,” Posada said.
This philosophy is evident in the restaurant’s approach to sourcing and preparing its meats.
We get the whole pig. We get a full lamb at least every two to three weeks,” Posada said. “We do in house butchering, so we get big muscles, and then everything gets processed here, hand-sawed, hand curing, which is really, really nice.
The restaurant features a dry age program, and Posada says they plan to launch a dry-aged burger soon, using a blend of dry-aged beef and pork.
“Dry aging tenderizes the meat. It intensifies the flavor,” Posada said. “We cook them (the duck) for 14 hours, low and slow, and then they all get put together on the plate. We also get whole short loins, that’s the muscle that comprises the porterhouse, the T-bone, and bone-in New York. So we take that, give it three weeks in the dry ager, and then we hand saw steaks.”
The restaurant plans to open its patio soon, offering the same menu both indoors and outdoors, and will introduce a brunch service in the near future. Posada says they are family-friendly and look forward to welcoming you through their doors.
“We have our own kids’ menu where we craft the same food. Eating at the table is supposed to be shared as well. We want to make sure that people order a few different things and they’re able to pass things along,” Posada said.
Posada expressed gratitude for the community’s support and hopes more people will come experience the restaurant’s dynamic menu.
“Thank you so much. I think that we have had an awesome response,” he said. “I want to keep inviting people to come in and check us out. We’re very excited to be here. We’ve got a solid team that I can stand behind and we’re ready to serve.”
