1 tablespoon unsalted butter
1 tablespoon olive oil
1 shallot, diced
2 tablespoons minced garlic
1 (6 ounce) can Tuttorosso® Tomato Paste Sweet Basil
1 ounce vodka
1 1/2 cups heavy cream
1 teaspoon red pepper flakes
1 teaspoon Italian seasoning
1 teaspoon dried oregano
Kosher salt and freshly ground black pepper to taste
1/2 cup grated Parmesan cheese, plus more for assembly
2 boneless skinless chicken breasts, butterflied and pounded thin
1 cup all-purpose flour
2 large eggs, beaten
2 cups Italian bread crumbs
vegetable oil, (neutral oil for frying)
1 Ciabatta bread
2 burrata balls
2-3 tablespoons basil pesto
