    ▢ 500g bread flour

    ▢ 400g filtered water, warm

    ▢ 1 packet (7g) instant yeast

    ▢ 7g maple syrup or vegan honey

    ▢ 15g extra virgin olive oil

    ▢ 10g salt

    Toppings —

    ▢ Roasted sweet red peppers (in jar), sliced

    ▢ Oil from roasted red peppers

    ▢ Fresh rosemary

    ▢ Wild garlic cloves

    Instructions:

    1. Add everything to bowl, adding your warm water last. Combine to form a shaggy dough with a dough whisk or a wooden spoon.

    2. Cover and rest for 15 mins. Perform a stretch and fold; with a wet hand, pull dough up and over the bulk of the dough to the opposing side. Repeat this for all sides of dough.

    3. Cover and rest for 15 mins. Then repeat stretch and fold. Once done, shape dough into a smooth ball with seam side down.

    4. Cover and rise until doubled, about 90 minutes. Meanwhile, parchment line a 9”x13” tray then drizzle some olive oil on top and spread evenly.

    5. Add risen dough to tray. With oiled hands, fold both long ends of the dough to the middle then flip so seam side is down. Drizzle about 1-2 Tbsp olive oil on top then cover completely with a piece of parchment. Rise again; about another 90 minutes.

    6. If dough hasn’t filled tray, gently pull edges to fill it with oiled hands. Preheat oven to 440F.

    7. Drizzle the oil from the roasted peppers over (about 1/4 cup). Dimple your dough, careful not to overdo it. Add sliced peppers, fresh rosemary, and garlic cloves.

    8. Bake for 15-20 minutes or until a deep golden brown. Remove and let cool. Cut and serve as desired.

    Wtffff I want this immediately!! Can this be made without much change with 00 pizza flour (bc all i have at home right now is that, AP flour and besan)? If not, I’ll gladly wait til tomorrow and get bread flour

    In my opinion, that dough is not moist enough for focaccia. Focaccia is normally 100% humidity, so the same amount of water and flour. It almost pours in.
