Chefs choice and waitress was super busy and didn't stop by til I had finished it so I couldn't ask.

Probably the best fish I've ever had. My new favorite if I can figure out what it is.

It melted in my mouth if that helps.

    If this is in the US my guess would be albacore tuna. It could also be swordfish but that doesn’t seem as common in the States.

  8. Usually when someone asks me to identify a fish that has a great buttery texture, it’s usually escolar and I then stare at them and ask how long it’s been since consumption.

    Greatly relieved not to have to do that here 😅

    Kajiki, AKA Marlin/swordfish. Doesn’t look at all like hamachi to me, color is wrong and that’s usually served with a part of the bloodline attached.

    Kajiki is delicious but vv high mercury so not something to eat regularly.

    Next time you get Ebi, get them to fry the head. The fish you asked about is Yellowtail/Hamachi. If you liked it, you may also like kanpachi.
