I started my keto journey about two months ago and honestly, the hardest part for me has been finding a good bread substitute. I'm such a bread lover (sandwiches, wraps etc).
Since I couldn't find any low-carb wraps where I live, I decided to try making my own sandwich bread. and it actually turned out great!
Here’s what you’ll need:
- 250g (about 2 cups) shredded Gouda cheese
- 10 whole eggs
- 15 egg whites
- 500g (about 2 cups) cottage cheese
- 100g (about 1 cup) almond flour
Just mix everything together really well, pour it into a baking dish, and pop it in the oven for about an hour at 200°C (390°F).
Super easy and it satisfies that bread craving perfectly.
I usually divide the bread into four portions and eat one portion each day.
Each serving comes out to around 45g of protein and 45g of fat — perfect for keeping me full and energized on keto!
You can also add some spices like oregano, garlic powder or pizza spice.

It looks so flat and lifeless. I’d suggest fluffing the egg whites and folding them in for some structure?! Glad you found something you like
I get that it may not look the best, but I’ve had plenty of recipes that looked weird or bad and still turned out great. I hope you enjoy it!

I will try anything to make bread replacements! I can’t afford keto bread online it’s about £8.00 for a tiny loaf in the UK. I’m looking at keto wrap recipes just now but I’ll try this as well. I used to make keto bread but it’s so hard to control the result without gluten, it’s a hit or miss every time. Some people can still eat gluten on keto but it screws my stomach up now.

You need a loaf pan. The tall shape of the pan allows for more water travel as the inside of this omelette cooks; the water mobility helps impart a rise in the “bread” and also helps slow cook the structure into place. In your creation, the high amount of surface area let the water cook out too quickly and the structure collapsed.
In the US my fave supermarket keto bread is Nature’s Own Keto. It tastes good and just like regular bread. Other brands are Keto Culture, Hero and some in-store brands. Do they sell these by you?

Keto batters are best used in molds – otherwise, they end up flat with no rise, like this. This is just a very dry omelette.
