Butcher or not, choice is a usda grading, which can be arbitrary. You could be the smartest butcher in the kingdom and the inspector did what he did anyway.
When I buy Choice steaks that are as marbled as Prime they are still not quite as tender or flavorful.
These look great. I honestly don’t give much attention to the “choice” versus “prime” grades. They can be helpful to the butcher or grocery store purchaser but because they’re graded on the primal cuts, sometimes you get lucky and get really terrific looking steaks in a sampling of “choice” cuts.

(Probably hidden under beef tongue or select stew chunks. Mid-morning on a Friday…that’s when I “shop” for pre-packaged steaks.)
Not kidding. Can’t tell you how often I find stellar/mislabeled steaks this way at a large grocery. Especially during the grilling season.

You found the butcher’s private “oops” stash buried behind the merchandise. He’s eating the damn sirloins you were supposed to have gotten.
$27 dollars for 4(!) Of these!? This is my favorite level of marbling and they’re big. This is a steal and I’m jealous.
Edit: 2 of these at the same price would still be a decent deal. At least where I live.
