Santa Maria Tri Tip from Costco

Smoked at 225 for 90 minutes prove hit 130

Wrapped in foil for 5 minutes then pan seared on cast iron until crust about 4 min each side, then wrapped again for 20 minutes

Was really good

Although the Santa Maria marinade this came with is a touch on the salty side for our liking, still really good.

Costco has some great meat and their tri-tip is no exception. I go for the prime and season it myself very simply with salt-pepper-garlic. I’d stay away from anything pre-seasoned or pre-bagged with a wet marinade. Also, I always cut/slice against the grain for the best eating experience (less chew and more tender). Yours looks great though 👍
