Ingredients:
For the Chicken Marinade:
• 2 chicken breasts, cut into cubes
• 2 tbsp fresh dill, chopped
• 1 lemon, squeezed
• 2 tbsp olive oil
• Salt and pepper to taste
For the Salad:
• 1 bell pepper, chopped
• 1 cucumber, chopped
• 1 small onion, chopped
• 2 tomatoes, chopped
• 1 tsp oregano
• 2 tbsp olive oil
• 1 lemon, squeezed
For Assembling:
• Pita bread
• Tzatziki sauce
• Feta
Instructions:
1. Marinate the Chicken:
Slice chicken breasts into cubes. Chop the fresh dill and add to a bowl. Squeeze in the juice of one lemon, then add the chicken breast, olive oil, salt, and pepper. Mix everything together. Cover and let it marinate for a couple of hours in the fridge.
2. Prepare the Salad:
While the chicken marinates, chop the peppers, tomatoes, onion, and cucumber. Toss them together in a bowl. Drizzle with olive oil and squeeze in the juice of one lemon, add oregano. Stir everything to combine.
3. Cook the Chicken:
Heat a pan over medium-high heat. Cook the marinated chicken cubes for about 5-7 minutes, or until golden brown and fully cooked through.
4. Assemble the Souvlaki:
Grab a pita bread, spread a generous amount of tzatziki sauce, then add the fresh salad. Top with the cooked chicken and feta cheese. Enjoy!
