I'm about to put this 2 1/2 lb pork steak on the grill for a slow, direct heat cook for dinner. I'll be mopping with a Snows-style mop sauce. I have a pot of beans cooking slow and will make some slaw later. Keep the dial tuned to r/grilling for updates througout the day!

Someone killed a pig. That’s a lazy butcher who doesn’t want to deal with separating the cuts properly. I’ve seen it a lot with beef in Texas. All those bits cook differently. Cut it apart to enjoy!
The pork blade steaks I always get are about a half inch thick. I’m drooling over this thick cut!
