Pineapple Skillet Cake, Vol. 2 Cookbook Recipe

2/3 CUP BROWN SUGAR
4 TBSP. SALTED BUTTER
FRESH CUT PINEAPPLE
SMALL JAR MARICHINO CHERRIES
10- OR 12-INCH IRON SKILLET
Melt butter and sugar in cast iron skillet. Simmer on
medium for 4-5 minutes. Place fresh pineapple rings
in skillet with cherries.
For Cake Batter:
1/2 CUP SHORTENING
1/2 CUP PACKED BROWN
SUGAR
1 CUP SUGAR
2 EGGS
1 1/2 CUPS SELF-RISING FLOUR
1 TSP. VANILLA EXTRACT
1/2 CUP MILK (WHOLE OR 2%)
Mix shortening, brown sugar, sugar & eggs until
creamy. Add flour and milk alternately-add vanilla.
Mix 2 minutes Spray sides of iron skillet with cooking
spray. Pour cake batter on top of pineapple/cherry
topping. Bake cake on 350 degrees until golden brown
and set. (approx. 25-35 minutes) Test doneness with
a toothpick. If toothpick comes out clean the cake is
ready.
“Cool cake for about 15 minutes-place the cake plate
on top of skillet and invert (flip) cake out!

    Upside Down Cake looks 👀Delicious. I make this cake a lease twice a month using Duncan Hines box cake mix that’s bcuz I’m the only one @ home n don’t want to waste good ingredients. I use a 3.4 box of vanilla instant pudding mix n one cup of pineapple 🍍 juice that comes with the pineapple 🍍 rings n 4 eggs 🥚 n a 9 x 13 noric ware aluminum pan in bake @ 350 for 40 to 45 minutes. N it comes out Perfect every time. The 9 x 13 pan fits 12 pineapple 🍍 rings perfectly but you need 2 20 oz. cans of pineapple 🍍 rings. I save the extra pineapple 🍍 rings to snack on later during the week lol 😂. TfS.
    I put the whole pan n the refrigerator bcuz it comes with a lid.

  8. I always put coarse pieces of pecans sprinkled over the pineapple and cherries. I too and use a cast Iron skillet to make this cake, but melt 1 stick of butter in the bottom then add 1 cup of pressed dark brown sugar…burners off, and stir until butter and brown sugar are well combined then put the toppings on it. The original recipe that I have and have used since 1972, used walnuts. They also are very good in this cake. They did not use cherries in their recipe but I sure do!! The recipe is from the turn of the last century and has been handed down through the family since then. There wasn’t even a numerical oven setting in the recipe…it said “moderate oven”. I use 350* and bake it until it is done…about 50-60 minutes. It too, is a very moist cake. The hardest part for me is flipping it over. My 75 year old wrists and hands often suffer from arthritis. I flip it into a round cookie pan (and use oven gloves) that has sides because the buttery brown sugar will run down the sides of that cake and I want to get it right without either burning myself from that heavy skillet, or dropping the cake!!
