    You can use any many potatoes and onions depending how many you’re feeding. Cook both onions and potatoes in your choice of cooking oil until done. Season. Crack eggs over the potatoes, let it sit and cook, or stir to make it scrambled. Again, season to taste.

    My mother used to make something similar.

    “French fry omelette” which is similar to the Spanish “tortilla”.

    She would make French fries (from potatoes not frozen but frozen is ok) and add them hot to a bunch of scrambled up eggs in a pan with olive oil and salt to make a French fry omelette.

    Cheap, and few ingredients.

    I make it for my kids from time to time bc they love it too.
