Blue cheese, splash of heavy cream, dash of Worcestershire, and a bit pan drippings, pepper to taste. Bring half of the cheese and all liquids up to about 140F while resting the steak, take off heat and add the rest of the blue cheese, stir and plate. Make as chunky or thin as you like.

Basting with butter to finish with garlic, rosemary and thyme is delicious. Making a pan sauce after pan searing is awesome as well. Marsala and redwine sauces with shallots and mushrooms compliment steaks perfectly. Or ketchup🤣

L’Entrecote Steak Sauce… Au jus… Peppercorn, or steak Diane sauce. Hollandaise sauce will also do nicely… Chimmichuri of course. A creamy mustard & mushroom sauce. Creamy Horeseradish sauce.
Or keeping it bog standard simple, one of either ketchup, mayo, or mustard i guess, or maybe, if you dare to “*bbq sauce*” 😳 😉

I was taught that if your steak neeeeds a sauce, than it wasn’t seasoned well. I now understand that a saucy accompaniment can really elevate the meal. That said, if I do a sauce it’s a quick pepper gravy.

Steak juice, garlic, red wine deglaze. Add whatever else you want. Take off heat when thickened and add some butter and stir it up until thick.
