Did you know you can use the whole leek—dark green tops and all—to make a stunning, zero-waste tart? In this video, I caramelise leeks until they’re meltingly soft, layer them with creamy cottage cheese, and bake everything under a crisp, golden puff pastry crust. Once flipped, you get a beautifully caramelised topping that’s packed with flavour.

A simple, sustainable recipe that’s perfect for any meal. Want the full recipe? Find it on my website!

  1. What an amazing recipe! Lovely presentation A+++ ! I shall make it at home first & then make it for the next potluck!!!

  2. Is British Leek a leek promotion organization? An association of leek farmers?? Either way this look great, will be making it for dinner this week 🙂

  3. Just replace the cottage with ricotta plus feta and this is goat recipe, that recipe already exists in Macedonian cuisine for very long time

  4. What a gorgeous simple beautiful attractive recipe! I love things like this that give the feel of luxury without so much labour and really let the few main ingredients sing! Subscribed!

  5. Looked like it was going to be divine until you put the cottage cheese, whatever for, gross ….

  6. It looks so good. I’d be afraid that I couldn’t get the grit out of the leaks though. The ones we get in the US&A are always super sandy.

  7. these are so beautiful! I had to make them today..l did not want sweet so I did not use any honey and I used goat cheese instead of cottage cheese… for me it came out of the oven beautiful, but it didnt taste like much of anything, the leeks are hard to cut and it just overall was a bit bland. I wouldnt make it again… wish it tasted as good as it looks but thank you for the recipe to try

  8. I made this tonight and it was a total hit!
It tastes amazing and it looks very chic. I thought about adding halloumi, but I kept it with cottage cheese to keep it more of a modern British dish.
One problem, when I was heating up the bottom of the tray, caramelising leeks, a corner of the greaseproof paper caught fire. 🔥 The crisis was averted, but people might want to watch out for that.
