The plant is only a foot tall. What would happen if I leave them?

    I myself would.
    I’d rather my plants put their energy into growing and establishing themselves at this stage rather than flowering and fruiting.

    I would. They seem to slow down growing if they are putting energy into fruit. Pinching the buds off should keep it doing more vegetative growth for a while.

    If you don’t you might get a few peppers but overall yield from the plant will likely be lower.

    I didn’t pluck and now I have a single mini habanero that’s 1/5th the size of a normal one. It’s pretty cute though.

    Nope, you should first deal with the broadmite infestation that’s stressing your plants and making them bolt to flower. That plant is probably better off pulled and the rest sprayed with miticide TBH.
