She liked it.

250 in the oven until 119°. Rest about 8 minutes then into 450° stainless pan for about 75 seconds each side then baste with butter. Rest 5 minutes. Slice.

No judging the cutting area. Tried to not make a mess due to lots of baby items on the counter now.

    Looks lovely – great job. In my restaurant experience (customer/back and front of house) I’d call this “medium” but there are regional differences, and differences even within the same region. Where I’m living now, many people would call this “rare”, in France, medium well. One suggestion, check the accuracy of your thermometer- 119 is on the upper edge of blue rare, and, I may well be wrong here, but I don’t see how that quick of a sear would bring it up to whatever the final temp was that gave it that colour, which I would call “medium” (but I’m not saying you are wrong to call it medium rare – it’s a bit subjective and not consistent from country to country, or even state to state or province to province. I bet if you ordered a rare stake in Manhattan, and one in a small town in upstate NY – you’d have quite different degrees of cooking (unless it’s at some fancy BnB frequented by city folk).

    Anyway – great job, looks DELICIOUS – wish I could get my wife to even TRY anything close to this. She’s Mexican and they cook the HELL out of anything that’s animal raised on land, but happily eat anything out of the ocean raw. She won’t even kiss me after I eat a piece of meat like the one you prepared until I wash my mouth out!

    Damn man, you are losing so much flavor and juice. I’m just saying I wouldn’t slice in this way, or even if I did, i would do it on a plate that the juice can stay on.

  10. Pregnant women can still eat steak medium to medium rare if it’s sous vide long enough to pasteurize it. The texture is not going to be perfect but it’s good enough!

    There’s some math you need to look up but I’d worth it
