I have grown some vegetables before in pots and such over the years with minor success (nothing prolific). Last year I tried to put together a vegetable garden bed and used some vegetable starts from the local feed store – nothing grew.
This year I redid everything and followed guidelines from Gardening for Dummies. I started everything from seed in February. If I had grow lights and did not initially overwater I think my tomatoes would be further along (I carted them outside when temperatures were above 60 degrees) but I am still incredibly pleased with their progress.
One long bed dedicated to tomatoes and another dedicated to peppers. I may have way overdone it with the number of plants but I wasn’t sure if all of the tomatoes/peppers I started would thrive. Next year if I am overwhelmed with the harvest I will have more confidence in not having redundant plants. Worst case scenario is a have a massive surplus of canned tomatoes/peppers (god forbid!)

All the clay pots are acting as labels for now. I need to add actual labels under each plant but have not gotten around to it.

Well done. You should be proud of what you’ve done here. Especially sticking with it after a bad year.
My suggestion would be to learn to make sauces. Tomato sauces can be very simple to make and will help you blow through tomatoes. You can freeze sauces in ziplock bags too so once you dial in a recipe you like you can portion a meal’s worth into bags and freeze them.
I always grow way more than I need but then can usually find ways to use most of it. Just change your usual routine meals to reflect what is on hand.
