I had one of the best cakes of my life in Washington DC and this is my attempt to recreate it. The cake in question was Capital Jill’s pistachio blackberry cake and she kindly tipped me off that the base was similar to Natasha Picawitz’s olive oil cake. So, I use that as the base. For the frosting, I started with a homemade pistachio paste which can be made in under 5 minutes with just roasted pistachios, powdered sugar, a little water, and almond extract in a food processor. The pistachio paste really transforms what could otherwise be a basic overly sweet vanilla buttercream into a frosting that tastes complex, nutty, and perfectly salty sweet. I also happen to make a batch of homemade blackberry jam, but a storebought jam would also be perfect. And let me tell you, even though the end result doesn’t exactly resemble the original, I was obsessed with this cake, and so were my friends. The cake is super plush and almost aggressively salty in a good way. And the nutty frosting with the fruity jam makes this feel like such a perfectly balanced cake.   2. This looks amazing. I wish I liked buttercream frosting at all. I was trying to think of substitutes and for some reason I landed on peanut butter. 🤣 So I'll be making a weird peanut butter and jelly cake while you are all going to be making this delicious blackberry cake. 😂❤
