


Recipe:
– 400 g AP flour
– 55 g whole wheat flour
– 365 g warm water
– 100 g starter
Mix all ingredients and let stand for 30 mins. After that, stretch and folds/coil folds every 30 minutes for 4-6 rounds. Shaped, threw it in the banneton. Cold proof for about 16 hours and baked at 450 for 25 minutes covered and 20 minutes uncovered.
My shaping skills are very IFFY 😂 with the higher hydration in this recipe I struggled with it. Also, I can’t seem to get the hang of scoring it in a pretty way. I’ll keep working on it 🫡
